Turkeys
Once you've had one of our juicy, pasture-raised turkeys, you will never go back to a store-bought bird. Our turkeys are raised on pasture without the use of antibiotics. We harvest the turkeys in our USDA-inspected meat processing plant here on the farm. Turkey will include giblets & neck inside the cavity.
Once again, we've chosen to raise our turkeys over summer when our pastures are the most vibrant and we have the most forage growing on the farm. As such, the turkeys are currently frozen. Turkeys ordered for shipping will remain frozen and ship in time to be thawed prior to Thanksgiving(make sure you have space to keep it frozen until it's time to thaw!). Turkeys ordered for pickup at the farm will be thawed or thawing so that they are ready for Thanksgiving day. Please note that this means turkeys for Saturday pickup will still be mostly frozen.

Shipped Turkeys
- Please note, only one turkey fits per shipping box.
- Turkeys will arrive two weeks prior to Thanksgiving. You will want to keep your bird frozen for about a week (see below) between arrival and thawing.
- Thawing Instructions for Shipped Birds - Your turkey will arrive frozen the week of November 11th- leaving you plenty of time to thaw your turkey before Thanksgiving. Just follow these instructions.
-
- Leave the turkey in its original, unopened plastic.
- Put the turkey, breast side up, in a tray or pan to catch any drippings.
- Place the frozen turkey in the fridge. Make sure the fridge is set to 40°F or lower.
- Allow around 6-7 hours per pound for thawing
- Here are approximate times to defrost in the fridge for the turkeys, according to the USDA:
- 15-18 pounds: 4-5 days
- 18-20 pounds: 5-6 days
- 20-23 pounds: 6-7 days
- We have found it helpful to check on your turkey at least 24-36 hours ahead of time to ensure it defrosts at the right pace. If the turkey is still solid on the outside, take it out of the fridge and let it sit at room temperature for up to 6 hours before cooking. While it rests, you should check it hourly to confirm that your turkey is cool to the touch but not frozen.
- Once thawed, your turkey can stay in the fridge for another 1-2 days before cooking.
Turkey Breasts
For the white meat lovers, we're offering XL turkey breasts this year. These are whole, double-lobed, bone-in, skin-on breasts (think a whole turkey without the wings and legs).
Brined Turkey Breast
A great year-round turkey offering, our brined turkey breasts will be available for Thanksgiving pre-order this year as well. These breasts are brined with a black pepper marinade that makes them just as tasty as a hot protein next to the mashed potatoes as they are chilled on a sandwich the next day. Ingredients: Turkey, Brown Sugar, Salt, Rice Wine Vinegar, Water, Black Pepper, and Celery Juice Powder. Weighs between 4.5 and 8lbs
Hams
Much like bacon, smoked ham is usually, in our opinion, messed up by the industry through use of cure accelerants, yield enhancers, fast turn-over, and liquid smoke.
Not here.
We use time to our advantage, allowing 9 to 16 days for the ingredients to naturally wick their way through the hams. After that, the hams spend 8 to 12 hours in the smokehouse we built here on the farm, where the heat and smoke are both generated by real logs.
We currently offer two different ham recipes: A traditionally cured 10lb ham, and an "uncured", no sugar added 2 lb ham.

- 10lb Ham Ingredients: Pork, Brown Sugar, Sodium Lactate, Salt, and Sodium Nitrite
- 2lb Ham Ingredients: Pork, Salt, and Celery Juice Powder
